Grind size is arguably the most critical variable in coffee brewing. It directly controls extraction—how much flavor the water pulls from the coffee.
Why Grind Size Matters
When coffee meets water, soluble compounds dissolve and become your cup of coffee. The rate at which this happens depends primarily on surface area—and surface area is controlled by grind size.
Grind Size Chart
Extra Coarse
Very chunky particles with visible bean fragments. Used only for extremely long brew times (12-24 hours).
Coarse
Distinctly gritty with visible individual particles. Standard for immersion methods with 4-5 minute steep times.
Medium
The "default" grind size. Feels like sand—not gritty, not powdery. Works for most automatic drip machines.
Medium-Fine
The sweet spot for most pour-over methods. Slightly finer than automatic drip.
Extra Fine / Espresso
Almost powder-like with no discernible individual particles. Required for high-pressure extraction.
